This morning, we chilled on the couch watching a reality show until lunch time. We had lunch at 2pm because we did the body balance live class we adore. Since we have plenty of time today, I cooked a yummy mushroom risotto and wanted to share with you the recipe (for 2 people) down below because it was delicious👩🏻‍🍳

You would need TIME (first and foremost) and also the freshest ingredients you would be able to find, namely :

  • 2 white onions
  • 300 gr. ceps + 200 gr. button mushrooms
  • 200 gr. risotto rice
  • 100 gr. white chardonnay wine
  • 200 gr. vegetable broth
  • chopped parsley and parmesan for topping

Stir in the chopped onions in olive oil and add the mushrooms to your pot. Then, deglaze with white wine. Add the risotto rice🍚and stir slowly during 2 minutes without stopping. From now on, add the vegetable broth, little to little, every 5 minutes until rice is fully cooked. It’s ready !! Before eating, I added parsley and parmesan, salt and pepper😋
